My Shortbread Recipe, Perfect for the Christmas Season

This has to be one of my all time favourite recipes. I searched for ages for the perfect shortbread recipe, through all the fancy cookbooks and Christmas recipes. My dream was to find the one that I could cook year after year to create a food tradition in my home, that would invoke all the good feels of Christmas whenever we cook it.

This recipe I found on the back of the rice flour box and was exactly what i was after, it’s perfect for little gifts too.

225g Plain Flour {8oz}

115g Rice Flour {4oz}

115g Caster Sugar {4oz}

1 Pinch of Salt

225g Butter at Room Temperature {8oz}

Preheat oven to 150°C or 130°C Fan Forced {302°F or 266°F Fan Forced}. Combine dry ingredients and then rub in butter until a smooth dough forms.

On a floured surface work into your desired shape. I try and leave the dough a little thick as it does not rise or move much at all.

Using a pretty pattern from a glass that I have floured I press in a pattern and place on a lined tray. Bake in the oven for forty minutes. Allow to Cool. Then enjoy the buttery goodness of this biscuit.
